CHB Baby Guinness Cake Recipe


Inspired by the delicious cocktail featuring Baileys over Kahlua, this is the most moist chocolate cake flavoured with Guinness and coffee, topped with a Baileys frosting, a brilliant bake for a celebration or Christmas!

 

Ingredients

120ml oil

200g plain flour

8tbsp cocoa

2tsp baking powder

1tsp bicarb

280g light brown soft sugar

200ml buttermilk

330ml Guinness reduced down to 120ml

1 shot of espresso

2 tsp Mixed spice

2 eggs

Frosting

150g soft salted butter

150g cream cheese

250g icing sugar

2 tbsp Baileys

1/2 tsp vanilla extract

 

Method

Reduce the Guinness over a medium heat while you prepare the other ingredients. 

Line 2 sandwich tins and preheat oven to 180

Whisk all dry ingredients together

In a separate bowl, whisk the wet ingredients together before combining with the reduced Guinness and then adding to the dry and combining thoroughly.

Divide between the tins and bake for 25 mins

Beat the butter and cream cheese together, before slowly adding the icing sugar and finally the baileys and vanilla

Assemble the cake and enjoy! It keeps really well as it’s so moist but never lasts very long in this house!
